Air Fryer Roasted Potatoes
This is a great breakfast. 5 min prep, 20 min cook time. Pairs well with Fried Eggs Over Easy.

- Peel 2-4 russet potatoes
- you can also use yellow potatoes, I still recommend peeling them, though.
- Dice the potatoes (go for about the size of a starbust candy or a bit bigger)
- After dicing, use 1-2 paper towels to gently squeeze the moisture out of the potatoes
- Add potatoes to metal bowl. Add a dash of your preferred cooking oil (olive or canola works). Swish the potatoes around to lightly coat them.
- Add seasoning of your choice my favorites are any combination of
- Salt-free cajun seasoning
- Salt and Pepper
- Montreal Steak Seasoning
- (Heavy use of Garlic / Onion powder will char in the fryer, avoid)
- If you really want to avoid burned stuff you can just salt the potatoes at this point and then season them more after cooking.
- Air fry for 20 minutes at ~400 deg. Shake up the potatoes halfway through.
- Eat them while hot
- Optional: eat with fried or scrambled eggs.
